The Rainbow Cake.

The Rainbow Cake Recipe

1 cup Crisco

1 cup margerine

2 cup of butter is better (aka 4 sticks) but I was OUT OF BUTTER. How does this happen? I don’t even know…

4 2/3 cup of white sugar….yummmmeeeeee

Cream the sugar and the butter

Add 10 egg whites

4 teaspoons of vanilla












Blend until just barely incorporated.

Add slowly and mix together:

6 cups flour

8 tsp baking powder
1 tsp salt
3 c milk, warmed for 30 sec in microwave to bring to room temp

You need Red, orange, yellow, green, blue and purple food coloring

Now:

Add 2 cups of the batter to 6 different mixing bowls and add one of the food colors to each bowl and mix. Put each in a 9 inch greased and floured pan and into a 350 Fehrenheit degree oven. They generally cook from between 15 and 25 minutes.

Once they are done (insert a toothpick through the middle and if it comes out clean you are good) then you can pull them out of the oven and quickly flip them over onto a cooling rack and out of the pan. Let cool for at least an hour.





AND NOW FOR THE FROSTING!

1 Cup of margarine

1 Cup of Crisco

3 Large dalups of whipped cream cheese

Blend until fluffy




Sift 3 cups of powdered sugar and add one cup at a time until fully encorporated into the mix.

Add 1.5 tsp vanilla

Add ½ cup milk.

Whip until creamy. I whipped it for like five minutes.




Frost each layer and layer the cakes. Frost the top and the sides. Refrigerate over night so you can surprise your coworker tomorrow…omg…so excited…
